France represents the first step of Chef Simone culinary journey. He moved there when he was only 20. At that time he didn't know that France was just the first of a long serie of country he was going to discover soon.

 

When in Paris, Chef Simone worked at Nolita Restaurant on the Champs Elisées.  

Vittorio Beltramelli, the Executive Chef, is one of his first mentors.
